Oh snap! You guys, Funfetti Chocolate Chip Cookie Sandwiches! SO GOOOOD. Okay, you know my serious love for chocolate chip cookies so I might be just a little bit biased about this. But honestly, when this recipe finally came together after a few batches of testing, they became my favorite chocolate chip cookie recipe…. of all time!
Technically, yes, you don’t have to make them into sandwiches. They are perfectly delicious, cakey, soft, and chewy all on their own. But if you can, you have to try them as a sandwich cookie! What isn’t made better by seven-minute frosting—Amen?
We are talking some serious decadence here. I love them! And as you know, I cannot just mindlessly eat these cookies. I’m saying hello to my first Valentine’s Day being Type 1 diabetic. Seriously depressing. But, I have been able to eat one of these Funfetti Chocolate Chip Cookie Sandwiches, and I might have just died and gone to heaven in that moment. DIED AND GONE TO HEAVEN, GUYS.
All right, first Valentine’s Day with Type 1 diabetes, let’s talk about that. Really, it hasn’t been that hard. The only candy I buy on Valentine’s Day used to be a bag of Dove dark chocolate. The one thing about being insulin dependent is that there are times in the day when I need to snack to keep my blood sugar up. So, a bag of dark chocolate bites really isn’t that bad. I’m saying this to you because as easy as Valentine’s Day is, Easter is going to be the hardest of them all! Like, seriously Cadbury eggs? What are you made of? The dreams of little kittens? I think so. There is no way I’ll be able to “snack” on a Cadbury egg without some meal time insulin. Oh! And those little malt eggs! Stop it! I’m going to need to go through some sort of chocolate candy withdrawal therapy to make it through April.
It’s been easy enough to take the extra insulin I need to have a treat here and there, but I’ve been really trying hard to be good so I can keep a healthy, balanced life. Just like anyone! But these Funfetti Chocolate Chip Cookie Sandwiches are going to have to be an exception to the rule. I love them. I love them more than I love Dove dark chocolate. I love them more than I love, I’m going to say it, Cadbury eggs.
I take that back, they are on the same level.
SAME LEVEL AS CADBURY EGGS. Just think about that.
Funfetti Chocolate Chip Cookie Sandwich

- -For the Cookies-
- 1 cup butter
- 1 cup granulated sugar
- 1 teaspoon vanilla
- 1/2 teaspoon salt
- 3 egg whites
- 2 3/4 cups all purpose flour
- 1/2 teaspoon baking soda
- 2 cups chocolate chips
- 1 cup multi colored Jimmie sprinkles (Wilton is one brand)
- -7 minute Frosting-
- 1 cup sugar
- 1/4 teaspoon salt
- 1/2 teaspoon cream of tartar
- 2 egg whites
- 3 tablespoons water
- 1 teaspoon vanilla
Instructions
Preheat the oven to 350 degrees.
For the cookies, place butter, sugar, vanilla, and salt in a standing mixer with a paddle attachment and beat on medium speed until it becomes fluffy. Add one egg white at a time, scraping down the sides between each addition.
In a separate bowl, whisk flour and baking soda together. Add dry mixture to the butter mixture, and beat again until combined. Add the chocolate chips and sprinkles and mix until combined. Turn off the mixer and fold the dough until the sprinkles are dispersed evenly.
Using a small cookie scoop, drop cookie dough two inches apart onto a silicone mat or parchment lined baking sheet. Bake for 10-12 minutes. Do not brown.
Let cookies cool for at least an hour before frosting.
For the frosting, combine the sugar, salt, cream of tartar, egg whites, and water together in a stainless steel saucepan. Heat over medium/low and beat with an electric hand mixer for 5-7 minutes until stiff peaks form. Remove from heat and stir in vanilla.
Pipe frosting between two cookies, press together, and enjoy!
