Banana Oatmeal Coconut Pancakes

This fabulous recipe for Banana Oatmeal Coconut Pancakes, Which also happen to be gluten-free. I didn’t really intend for them to be GF, but they just ended up that way, so here you go all my gluten-free peeps! You’re welcome.

Tomorrow is the start of Feast Portland! I cannot wait to get there and get my sneaky little hands on ALL THE FOOD. And, most importantly, take pictures of all the food. I get to stay up there with my good friend Ashley so I don’t have to commute back and forth the whole weekend. Who would have thought that at the ripe old age of 31 we would still be having sleepovers?

Make sure to follow along on Instagram for updates and all the fun shenanigans I’ll be getting myself into. Awkward handshakes and calling someone by their wrong name is where I THRIVE. You won’t want to miss the amazingness of Sunday night at the Secret, or, should I say, Not So Secret Supper. It’s going to be ethereal and an Instagram-licious event. Especially when the hosts are none other than Eva Kosmas Flores, Joy the Baker, Gather and Feast, Feed Me Dearly and Danielle Firle, (who is, probably the coolest person you will ever meet).

But once the Feast festivities are over, I’ll be definitely looking to detox off of all the highly addictive and caloric things. So, these Banana Oatmeal Coconut Pancakes will probably be on my list next week when I’m trying to get back into the normal swing of things. Exercise will be a must. Salads for dinner will be a given. But excuse me while I don’t compromise on my favorite meal of the day: Breakfast.

So the deal with this recipe is that you basically just dump all ingredients into a blender and that’s your batter. Then you sizzle them with some butter or coconut oil over the stove. You won’t even know that these puppies are free of gluten. You just won’t.

Hey! And bonus for you peeps who kinda like gluten and don’t have coconut flour at the ready, just sub out the coconut flour/milk and replace it with ½ cup all purpose flour. I’m gracious like that. I give any and all unsolicited problem solving advice.

I promise you that your morning will thank you. Think – you in an apron effortlessly flipping some healthy-ish pancakes while your kids wait patiently at the table for you. Your husband graces you with a steaming cup of coffee. The sun is beaming in from the windows and a faint hint of Rosemary Clooney is playing in the background. Sounds great, right? These pancakes will not manufacture that moment for you. But they’ll get you pretty close to it. PRETTY CLOSE.

Banana Oatmeal Coconut Pancakes

Lift up your morning with these power packed and gluten free Banana Oatmeal Coconut Pancakes. Get ready to be floored with a yummy tasting HEALTHY pancakes.

Ingredients

Scale

1 medium banana, ripe

1 cup old fashioned oats

2 eggs plus 2 egg whites

1/2 teaspoon baking soda

2 teaspoons vanilla

1/2 cup coconut flour

1 cup milk – coconut, almond, goat etc.

coconut oil for frying

Instructions

Place all ingredients in a blender. Blend until smooth. Heat coconut oil in a skillet over medium/high heat and pour pancakes with about 1/3 cup of batter each. Cook until the pancake is about cooked three quarters of the way through and flip. Continue to cook until cooked all the way through.
