Chai-Sugared Molasses Cookies

All right, this is another cookie recipe that was given to me. I mean, I did some upgrades to it like I always do—I just can’t leave well enough alone. Now they’ve become Chai-Sugared Molasses Cookies. But yes, this molasses cookie was definitely given to me by a co-worker. I remember walking into the break room and seeing a tub of these cookies, and reaching my hand in only to devour its contents in mere seconds. (It was year-end and I might have been eating my feelings). Even still—I had to find out “WHO BROUGHT THOSE ?”!

I finally found the creator of these most delicious, flavorful, soft, and healing cookies. (Yes, these cookies can now heal). Adam had brought the molasses cookies that changed my life forever. He has the same love for cooking and baking as me, and so of course it was Adam. He graciously gave me the recipe and I’ve made them every Christmas ever since.

Now they have morphed into these Chai-Sugared Molasses Cookies. You won’t be able to keep your mitts off of them! They are the only way to cookie this Christmas. Chai Sugar is my number one right now. I got the idea from Half Baked Harvest when she coated a pumpkin cookie in chai sugar. GENIUS. And so, Chai-Sugared Molasses Cookies were invented.

My mom never made molasses cookies growing up, so I’ve had years of remiss. Ginger snaps, yes, since they are my dad’s favorite cookie, but no molasses cookies to speak of. It’s probably why I like them so much, because they are so unique. Plus, as you guys can tell by now, I really, really, really love a soft cookie. They are the heroine in most of my blog posts.

In my opinion, all cookies are easy and simple to execute, so don’t be intimidated by this one! Really and truly. I usually whip up this dough, and then bring it along with the sugar to the coffee table, and roll and dip away. Give it a whirl and tell me how you are able to not eat seven of these cookies at a time. I’d appreciate it.

Chai-Sugared Molasses Cookies

These Chai-Sugared Molasses Cookies will blow your mind. Perfect for the Christmas cookie arsenal, and as delicious as they sound.

Ingredients

Scale

|| Chai Sugar ||

1 cup all natural sugar

1 tablespoon ground cinnamon

2 teaspoons ground cardamom

2 teaspoons ground ginger

1 teaspoon ground cloves

1 teaspoon ground nutmeg

|| Cookie Dough ||

1 cup butter

1 1/2 cup granulated sugar

1/2 cup molasses

2 eggs

4 cups all purpose flour

1/2 teaspoon salt

2 1/4 teaspoons baking soda

2 1/2 teaspoon  ground ginger

1 1/2 teaspoon ground cloves

1 1/2 teaspoon ground cinnamon

Instructions

Preheat oven to 350 degrees.

In a small bowl, thoroughly mix together the ingredients for the chai sugar and set aside.

|| Cookie Dough || Cream the butter, sugar and molasses together in a standing mixer. Add the eggs one at a time and continue to beat until fluffy. In a separate bowl, mix all the dry ingredients together and add to the butter mixture. Beat until the dough comes together. 

Scoop out 2 tablespoons of dough and roll into a ball. Roll the cookie dough ball into the chai sugar until evenly covered and place on a parchment-lined (or a silicone mat) cookie sheet.

Place in the preheated oven and bake for 11-12 minutes.

  3. Love the idea of the chai sugar! I live in a high-altitude city, and I always have problems with cookies and molasses, but these cookies look like they are worth the effort

    These cookies are what Christmas is about! Woohoo! The smell of them baking makes you want to have a decorating extravaganza. Make you want to snuggle into your fave blanket with a good book, and be nice to people. I’m excited for this recipe!

  5. I want to try these- my husband’s grandma handed down a molasses cookie recipe that I’ve used, but it has less molasses, and since I bake gluten free now, they don’t work as well. Love the chai sugar- and can’t wait to try it!
