Matcha Cakes with Lemon Icing and Pomegranate

There are smells that pull me back in time. Back to a summer drinking ginger soda from a glass bottle outside of the Co-op. Nights star gazing listening to Counting Crows. The smell of tea leaves and warped wood bring me there to that insecure feeling – longing – growing up. It’s easy to romanticize moments of memories and youth. People who flashed in a pan now float in my memory like a reoccurring dream. When I do go back there in my mind, usually when listening to Counting Crows, I see someone I barely recognize and she isn’t me anymore.

It almost feels by now that time was nonexistent. It belongs in the haze of childhood when in reality it wasn’t long ago at all. And it was real. Soon the New Year would bring a new perspective and a shedding of skin. It was change in its most welcomed form.

Life morphs so fast that my memories feel like they are so easily accessible. All it takes is the redolence of Irish Springs and I remember how I felt in a moment as a different person. Knowing that we grow up and slowly our eyes open to a new and different truth. And so youth goes as we trade in passion for practicality and I have to say, I much prefer it.

The smell of green tea leaves in matcha form brings this dessert to life. As do my memories and me. It is a perfect easy dessert that has complex flavors and beautiful Christmas coloring. Although this dessert, I know, would be great year round. But if this December is a long one for you, make it right now, and enjoy it with a person who is fixed.

Matcha Cakes with Lemon Icing and Pomegranate

A perfect, easy dessert that has complex flavors and the beautiful colors of Christmas.

Ingredients

|| Matcha Cakes ||

1 cup butter, room temperature

2 cups white sugar

4 eggs

1 teaspoon vanilla extract

1/2 teaspoon salt

3 cups AP flour

1 teaspoon baking powder

2 tablespoons Matcha powder

1 cup buttermilk

|| Icing ||

1 Meyer lemon (or any lemon will do), juiced

1 1/2 cup powdered sugar

1 tablespoon corn starch

Water to drizzle consistency

Instructions

Preheat the oven to 325 Degrees. Butter mini bunt pans.

|| Matcha Cakes || In an electric mixer cream the butter and sugar together for about a minute or two until it becomes slightly pale. Add in the eggs one at a time. Scrap the sides of the bowl and mix again. Add the vanilla and salt. In a separate bowl whisk the flour, baking powder, and matcha together. Alternate adding this mix in with the buttermilk.

Once the batter is all prepared spoon it into a large piping bag and cut off the tip. Squeeze the batter into the prepared baking dishes filling about 3 quarters of the bunt.

Place in the oven and bake for 20-25 minutes. Start checking at 15 minutes since the density of your pan will change cooking times. I used a thick pan from Crate and Barrel and it took about 20 minutes exactly. If you plan on making these into cupcakes the cooking time should stay the same. If you are using a regular sized bunt pan the cooking time increase to 60-70 minutes but again start checking at 45 minutes.

|| Icing || While they are baking, whisk together lemon juice, powdered sugar, and corn starch in a small bowl. Depending on the size of your lemon you will need some water to get to a drizzling consistency. Add about a teaspoon at a time until you reach it. You don’t want it too thick or too runny. But you can always add more powdered sugar if you add too much water.

Once the bunts are done they will need to cool on a baking rack about ten minutes before laying them on some parchment paper and drizzle generously with the lemon icing. Sprinkle with pomegranates before the icing has set. Be generous. The pomegranates are what really make this dessert pop!
