If you have seen any of my Instagram stories this summer, you know how much I have been using and loving my PackIt! Literally love. I know, because I get kind of giddy when there is an excuse to use it. So, obviously I was ecstatic when they reached out to me to do a giveaway. Because, you all deserve this kind of love too :).
A few weeks ago, our city held a movie night in the park. Cool, right? Well to top that, they were playing Harry Potter. HARRY POTTER YOU GUYS. So, obviously the family got together, packed blankets, a frisbee, snacks, and most obviously, I packed Butterbeer in my PackIt, and we went on our merry way! The great thing about this cooler is that it’s designed to go into the freezer! I was able to keep the Butterbeer foam AND the creme soda fresh and cool while we waited for the sun to go down.
This just in! This wine cooler can also fit a liter of soda if needed. Just sayin’.

Let’s talk specs, shall we?
PackIt will fold right up into your freezer. It works just like a refrigerator on the go. Kind of perfect for all the baseball/softball parents out there. The bag itself has a freezable gel that is built into the walls so you don’t have to bother with icepacks, IT IS AN ICEPACK. It takes about 12 hours of sleepy time in the freezer before it’s ready to hit the outdoors. Also, the picnic tote has so an amazingly large compartment and a whole section to keep your utensils organized. This is a major bonus for an organizational freak like myself.
But seriously, let’s talk Butterbeer! After my first time visiting Universal Orlando I was hooked on Butterbeer. It’s slightly sweeter than a regular creme soda and the cream foam on top is glorious. The recipe itself is a secret. It’s a Chamber of Secrets. HAHAH get it? Oh my word.
So I went off to make my own and let me tell you, it’s taken some tries and some fails. There really is no way to duplicate the perfection that is drinking a Butterbeer in Diagon alley. But I think I developed a pretty close second. Give it a try at your next Harry Potter Party! Or maybe on Harry ’s birthday that arrives as the seventh month dies. You know…. that kind of obsession level.
- 1 cup water
- 1 cup sugar
- 1 tsp vanilla
- 1 liter creme soda
- -Creme topping-
- 3 cups heavy cream
- 1/2 cup butterscotch syrup
- 1 tablespoon sugar
- pinch of salt
Make a simple syrup by simmering the water and sugar together until reduced by half. Do not over boil, just simmer slowly for about a half an hour. Add in the vanilla once off the heat.
For the cream topping, slowly whip the cream, butterscotch, sugar and pinch of salt together. The consistency should be soupy and not stiff.
Use 1 tablespoon of simple syrup to 1 cup of creme soda and top with 1/3 cup of creme.
