WHOA… Pepperoni Pizza Fondue? Okay—I am loving this dip. Just simply cannot get enough and I don’t want to either. Cheesy, bready, and topped with the most perfect, crispy, mini pepperoni slices. Stop what you’re doing right now, and get yourself to the store to buy all the ingredients for this fondue.

How elegant does Pepperoni Pizza Fondue sound to you? The title kind of cracks me up a bit. This dip is definitely an homage to Daniel and all his pizza-loving ways. I’ve always loved pizza, don’t get me wrong, but I never thought it would turn out to be one of my major food groups. That’s what happens when you marry the pizza version of the Cookie Monster.

He LOVES himself pepperoni pizza. Me? I love veggies, I love Hawaiian, I love combo, I love bacon bbq ranch… I even love taco pizza! Look it up, it’s a thing, a very delicious and wonderful thing. But, Daniel always stays with pepperoni. He is a creature of habit.

So, when I told him what I was planning on making for my third Super Bowl snack, he was THRILLED. Easily, the happiest I’ve seen him since that one time the 49er’s actually won a game this year. The second time they won he was worried it would ruin their draft pick. Can’t win with this guy.

Now, let’s get down to the nitty gritty of this recipe. It’s basically a garlic Alfredo sauce with stringy mozzarella added to it. It’s then delicately topped with crispy pepperoni slices that add the best kind of salty topping you might ever get in a fondue, since more times than not, fondues don’t come with a topping. I’m making my own rules here, people!

 

Pepperoni Pizza Fondue

I like to crisp the pepperoni slices by frying them in a saucepan. Trust me, it’s the only way to go. Especially, when it meets the soft bread and the creamy cheesy fondue, you’re heart might literally stop. You can use whatever you think will suffice for dipping. Bread: a slightly more obvious and favorable way to dip. Bell peppers, naan, and steamed broccoli will all work too.

We are most likely spending our Super Bowl home alone. I’ll probably make a batch of chili for us, and we will turn the game on, light a fire, and just chill out in our 9er gear. Our life has been so crazy lately that we prefer this to the fun of watching it with a crowd. I’m ready for life to calm down a bit, but I’ve accepted that it’s just the way it is. I’m either A) Sick or B) Busy. I can’t complain though, I’ve enjoyed every moment of my business. Maybe, instead of saying I’m “busy” all the time, I’ll just stay I’m “productive.” It’s way more positive that way.

Pepperoni Pizza Fondue

Looking for a dip to please a crowd with? Look no further than Pepperoni Pizza Fondue. The creamiest, cheesiest way to party.

Ingredients

Scale

1 cup mini pepperoni slices

1/2 cup butter

2 cloves garlic, minced

pinch of salt

1/4 cup all purpose flour

2 cups heavy cream

1 cup whole milk

1 cup shaved parmesan cheese

2 cups shredded mozzarella cheese

1 tablespoon flat leaf parsley, chopped

Bread bowl, optional

Instructions

Place pepperoni slices in a frying pan over medium/high heat and cook until crisp.

Melt butter in a medium saucepan over medium/high heat. Add minced garlic, salt and flour, and cook together for one minute stirring occasionally. Add the cream and whole milk, and cook until the sauce starts to thicken. This should take about five minutes. Take off the heat and add the Parmesan cheese, and whisk until melted. Add in the mozzarella cheese half cup at a time and adding the next half cup once the previous has melted. Sprinkle in the minced parsley. 

Pour into a bowl or carved out bread bowl, and top with crispy pepperoni slices. Serve with bread, naan, bell peppers or any desired veggies. 

Notes

If you overcook the roux and the sauce is too thick, just add more whole milk and blend with an immersion blender

Serve immediately or place in a small crock pot on low and it will keep through the day.

Congrats, you’ve got such an amazing career ahead of you, I think you are so talented and am so impressed by the the amount you’ve accomplished in such a short time (and when you’re dealing with illness as well).
