I’m going to bet that during your normal weekday routine, slaving in the kitchen for two hours isn’t going to make the schedule. Same with me. During the weekends I love to kick back in my kitchen and have at it. You know, do food right. But during the weekday I’m all about finding quick, yummy meals that are down-right delicious and come together in under 30 minutes.

No, I’m not getting all Rachael Ray on you.

But it should be said that while I enjoy the long process of cooking and generating a beautiful plate, I also know that every meal cannot include a cheese course. We are all on budgeted time and calories during the weekday. Blast my 30 year old metabolism!

Here is my simple weekday meal recipe: veggie, rice, meat, and sauce.

And while my July, as previously stated, is day to day crazy (CRAZY!!!) I’ve been living by this weekday meal recipe like gospel spoken on an Easter Sunday. And there are even times when I get to sit back and turn on my rice cooker while Daniel grills up the meat and veggies.

Once this month is gone, the wedding cakes are done, and after I’ve eaten my way through Sacramento, CA during the International Food Bloggers Conference, I’ll have the energy and time to spend more than a half an hour on dinner. But as of right now, I am enjoying the simplicity of this delicious Shrimp Avocado bowl.

Because, oh my gosh, I’ve added this seasoning to practically everything we’ve been eating. I love, love-love-love, the way it tastes. Slightly sweet/smoky mostly savory/spicy has made its way onto all the chicken/shrimp/pork/ground turkey/sweet potatoes I’ve been making lately.

So try out this simple (super fast) recipe. Or if you don’t have shrimp on hand, use this same seasoning mix on whatever you fancy and see what I’m talking about. But eventually, try this recipe as is. Because creamy avocado and crisp fresh romaine lettuce with high quality teriyaki sauce on a base of perfectly cooked white rice has Thursday night written all over it. ALL OVER IT.

Spicy Shrimp and Avocado Salad

This spicy shrimp and avocado salad recipe comes together quickly and can be modified to fit whatever is in your pantry right now!

Ingredients

1 pound shrimp, deveined

2 garlic cloves

4 tablespoons olive oil

1 teaspoon paprika

1 teaspoon smoked paprika

1/2 teaspoon crushed pepper flakes

1/2 teaspoon cumin

1/4 teaspoon salt

1/4 teaspoon pepper

2 heads of romaine lettuce

1 avocado

1 tablespoon chopped cashews for topping

teriyaki sauce for topping

Instructions

Dab the shrimp with a paper towel to remove any excess liquid. In a small bowl mix the paprika, smoked paprika, crushed red pepper flakes, cumin, salt, and pepper. Place the shrimp in a medium bowl with the spices and stir until all the shrimp are coated.

Chop the garlic and place in a medium saucepan with enough olive oil to completely coat the bottom of the pan. Turn the heat on to medium and add the shrimp once the garlic starts to sizzle. Cook the shrimp for 5-8 minutes stirring every minute or so.

While the shrimp is cooking chop up the lettuce and avocado.

Serve with rice and top with cashews and teriyaki sauce.
