Um, yeah…then there was this. Steak and Gorgonzola Potato Chip Nachos will—I promise I’m not exaggerating—change your life. I’ve always loved nachos any way they come. Especially when perfectly seasoned potato chips are used as the base. And yeah, let’s not forget a nice well-marbled steak. I’ll take this whole plate please and thank you.

I cannot sit back and eat bland food. I have to have flavor, herbs and cheeeeeeese. This cheese sauce is literally the greatest thing in the world. I could put it on anything. It’s sauce heaven. Is that going too far? But seriously, when is cheese not synonymous with heaven? When you make this recipe, you will be on my side and understand the complete need to exaggerate.

It feels weird to admit this, but lately I’ve been cooking more than usual. Which is funny since I am a food blogger and I haven’t been posting as much. But it’s been great. It’s made me fall in love with the kitchen again. I’ve made some realizations these past few weeks of just cooking to nourish. I’ve learned that not everything has to fit into a pretty little Olive and Artisan box. Living under a complete set of guidelines that dictate what I put on the blog is no longer viable. I love scratch recipes and I will always dedicate myself to home cooking. But, there will be times when shortcuts are needed. I’m not going to mill my own flour and make my own ricotta. Especially when what is most important is making sure my blood glucose is normal and that I’m on top of my carb count. Balance.

I’ve been able to relax. I’ve been able to sit down with Daniel and watch Netflix. It’s been incredible. And what is even crazier, I’ve had normal blood sugar levels. I mean, I’m still up for a long fight to stay consistent but “normal” is a word that I crave.

Speaking of normalcy, I’m happy to be getting back to normal after spending last week as a jury member on a criminal case. Worst experience of my life. I may or may not have cried after deliberations. I get that it was my civic duty but gosh, next time I’m going in dressed as Princess Laya, holding a Koran and talking to myself.

Let’s just say I could have used 12 servings of these nachos after every day of trial. I know for a fact that it would have cured my anxiety. Oh yeah, nachos are a perfectly acceptable dinner. You have my blessing.

Steak and Gorgonzola Potato Chip Nachos

This take on steak and potatoes will seriously blow your mind. A recipe that is simple and quick and tastes like you’re a culinary genius.

Ingredients

Scale

2 tablespoons vegetable oil

1 pound steak

2 teaspoons salt

1 bag of thick-cut potato chips

|| Gorgonzola Cheese Sauce ||

1/3 cup dry white wine

2 tablespoons butter

1 cup cream

3/4 cup Swiss or Gruyere cheese (I used a mix)

3/4 cup Gorgonzola cheese crumbles

2 tablespoons shredded parmesan

1/4 cup chopped chives

1/2 cup chopped green onions

Instructions

In a small, cast iron skillet, heat the oil on high until you see it smoke. Sprinkle one teaspoon seasoned salt on each side of the steak and place in the skillet. Cooking times will vary based on the size of your steak. My steak was about one-inch thick and I cooked it for 3 1/2 minutes on each side. 

When the steak is done, wrap in aluminum foil to let the juices rest.

|| Gorgonzola Cheese Sauce || Turn the heat down to med/low, and with the same skillet, carefully pour in the white wine. This will release all the good drippings from the steak. Add the butter and cream, and mix until combined. Slowly add all the cheese and continue to stir. Once the cheese has melted, add the chives and remove from the heat. Taste before adding salt if needed.

Cut up the steak into small pieces and sprinkle over the potato chips. Pour the cheese sauce over the steak and potato chips  and sprinkle with the green onions. 

Serve immediately. 

Notes

Buy the best steak you can find at the store. It makes all the difference. Whatever type you prefer, just make sure it’s well marbled.
