How about these Sweet Chili Meatballs? They are by far the best appetizer/dinner/snack/lunch/anything else you want. They are also, by far, one of the most popular recipes on the blog and for good reason. Let me tell ya’ why.

  1. They have that perfect savory/sweet deliciousness that is just right up your alley. Or maybe it’s just me but I go bonkers for salty meets sweet.
  2. They are versatile! I’ve made them as appetizers for the big game and for dinner alike! When I make them for dinner I just add some grilled pineapple a some white rice for pure perfection. Yep, you’re welcome.
  3. I’m always looking for meatballs sans red meat! The recipe calls for pork but I always use half pork half ground turkey! Hello light and healthy meals! Just another thing to check off of your worry list.
  4. Any excuse for sweet chili sauce and cilantro amiright????
  5. The colors are so perfect! I mean, meatballs aren’t that gorgeous to begin with but these? So purdy.

Any reason you decide to make these is a good reason. They are a great way to remember your protein. Hey, Karlee, have you had any protein today? The answer is usually no. Thankful enough this recipe makes a solid 32 meatballs. Some for dinner, some for lunch, some for the freezer for future reference.

I’m talking fool-proof kind of stuff. Then we’ll end the day with dinner and a solid walk around the neighborhood before we snuggle in for a night of Netflix and left over cream puff scraps. Hi! this is the life.

Sweet Chili Meatballs

Sweet chili meatballs, impress anyone with this flavor packed recipe. For meat lovers and foodies alike.

Ingredients

Scale

2 pounds ground pork

2 cloves of garlic, chopped fine

1/4 cup cilantro, chopped

1/2 cup red onion, chopped fine

1 teaspoon ginger, heaping

2 teaspoons Lowrey’s seasoning salt

1/2 cup panko bread crumbs

1 egg

1/4 cup buttermilk

1/2 cup sweet chili sauce

Instructions

Preheat the oven to 350 degrees. 

Place pork, garlic, cilantro, onion, seasoning salt, ginger, egg, buttermilk and bread crumbs electric mixer with a paddle attachment. Mix until it is well incorporated, no longer than 1 minute.

With a one-inch cookie scoop, portion the mixture and roll between your hands until it forms a ball. Place on cookie sheet or casserole dish. Bake in the oven for 25-30 minutes.

When the meatballs are done cooking (internal temperature at 170 degrees) take them out of the oven and immediately and generously glaze sweet chili sauce on with a brush. Sprinkle on chili flakes and extra cilantro.

Serve with sweet chili sauce as a dip or over a bed of coconut jasmine rice.
