Browned Butter Candied Pecan Dark Chocolate Chip Cookies

Nothing says Christmas more than spending an hour to candy some pecans early on a Saturday morning. Yes, that may seem crazy to you, but that is my life. I contently ask myself, “How can I make my life just a little bit harder than it already is?” Such a question has resulted in me spending three hours making a double batch of Italian meringue buttercream frosting and spending more than necessary on groceries I’ll never use because of my hard rule about keeping fresh herbs and lemons in the fridge with no real plan for them.

All this to say, go ahead and buy the pecans already candied for this recipe for Browned Butter Candied Pecan Dark Chocolate Chip Cookies. However, candying them myself saved me about $34.99 if we are going off of Whole Foods pricing, which we aren’t, because we all aren’t independently wealthy. Go to your local grocery store, and buy them on the cheap. Unless of course, you want to wake up early one Saturday morning and candy them yourself?

Update: found them at Trader Joe’s for 3.99. Treat yourself.

Hey, you knew I was going to have a chocolate chip cookie recipe coming up on the blog right? It had been FAR too long. I love chocolate chip cookies. I am that person at any event where there is a refreshment table scoping out the chocolate chip cookie situation. I ask myself, “How many can I eat before it looks socially unacceptable?”  “Did I bring a zip lock  bag in my purse?” “Look casual, Karlee. Like your interested in networking when really, you’re here for the chocolate chip cookies.”

I’ve never come across a chocolate chip cookie I didn’t like. That’s not true, I once bit into a oatmeal raisin cookie that was posing as a chocolate chip cookie, and I haven’t recovered. I’m processing, I’m dealing, and I know there is hope to overcome my PTSD. But let’s be prudent people —  properly label your assorted cookies.

All that to say is, this cookie won’t let you down. This caramel/nutty/fragrant browned butter in a cookie that is filled with dark chocolate chunks and candied pecans? YEP. No need for an assortment of cookies at your table when these little guys are made. They will be the first gone at your Christmas event. Probably tucked away in the zip lock bag hidden in my purse for me to nosh on later.

These are also amazing to make ahead and freeze in little cookie cutouts! Bake them at the same temperature for a few minutes longer! Hello, making your life even easier!

Put your chocolate chip cookie on steroids and add browned butter pecans in this recipe for Browned Butter Candied Pecan Dark Chocolate Chip Cookies.

Ingredients

Scale

1 cup butter, melted until brown and nutty

1 cup brown sugar

1/2 cup granulated sugar

1 teaspoon salt

2 teaspoons vanilla extract

2 eggs

3 cups flour

1/2 teaspoon baking soda

1 1/2 cups candied pecans

2 1/2 cups dark chocolate chips

Flaked sea salt for topping

Instructions

Preheat oven to 375 degrees.

In a standing mixer, cream browned butter, brown sugar, granulated sugar, salt, and vanilla. Add the eggs one at a time, and scrape down the sides. 

Add the flour and baking soda, and mix on med/low for 30 seconds.

Add the candied pecans and dark chocolate chips, and mix just until incorporated. 

Scoop dough with a small cookie scoop and place two inches apart on baking sheets lined with a Silpat mat or parchment paper. 

Bake in the oven for 8-10 minutes one baking sheet at a time. Remove from oven and sprinkle with flaked sea salt.
