Cardamom Palmiers

There is a time and a place for a complicated cookie (my nickname BTW). There are moments when we just want to huddle around a warm kitchen island with family and bake, let’s say, a triple chocolate peppermint shortbread cookie by my friend, Allie. There are also times when we are due for a cookie exchange in a few hours and we need something quick.

And that’s where the Cardamom Palmier steps up to the plate for a walk-off home run. Because we more than likely have a box of puff pastry dough in our freezers and a ½ cup of sugar to spare. If you don’t, you’re neighbor sure will. And a gentle teaspoon of ground cardamom in your spice cabinet will make this simple French cookie come to life.

We are, essentially, burning sugar onto a buttery puff pastry to make a caramelly, flaky cookie that will make you appear like you labored all day over these little guys. Today, I’m giving you the shortcut we all need every once and a Christmas. A shortcut like paying Macy’s to gift wrap or picking up mac n cheese from Elephants Delicatessen on 22nd Ave for a Thursday night dinner in.

Daniel and I are off to the races from here on out. Christmas break is in our sights and we have some very special plans. Aside from watching literally EVERY Hallmark Christmas movie that will come out this year, we also get to live out the dream of watching the Warriors play in Oracle Arena. I know this might not be a big deal to most of you, but for us, it means so much. But, until we get there, we’ve got parties, exchanges, and events to attend and fill our hearts with enough joy to last us through 2019.

The simplest, most decadent cookie you will ever make this holiday season!

Ingredients

1 sheet puff pastry

1/2 cup sugar

1 teaspoon ground cardamom

Instructions

Dethaw puff pastry from freezer and set the oven to 400 degrees.

Mix the sugar and cardamom together and sprinkle 1-2 teaspoons on a clean surface. Place puff pastry on top of the sprinkled sugar. 

Pour the rest of the sugar on top of the puff pastry and spread evenly with your fingers. Make an even coating.

Roll out the sugar/puff pastry until the length has reached about 13 inches. No need to be precise. The point is to thin out the dough and introduce the sugar.

Fold the edge of one long side to the center of the dough. Repeat with the other side. Repeat this step on more time. Then finally, take one long side and fold it over the top of the other long end to make one long piece of dough.

Cut the sides to clean up the edges. Cut the cookies into 1/2 inch thick cookies and place on a cookie sheet with the inside faced up.

Bake for 12 minutes on one end then take out of the oven and flip the cookies on the other side. Continue to bake for 5-7 more minutes. 

Let cool before serving.

    1. Hi if you have the time instead of ground cardamon, I grind the inners of 35 cardamon pods with brown sugar and sprinkle this on the pastry that has been brushed with melted butter.The taste is amazing! Xx

  1. Delicious! But– when you take something out of the freezer, you thaw it. “Dethaw” would mean to un-thaw or freeze.
