Welcome to my new website! I mean how cute is this? We have been working tirelessly this summer on trying to rework the website to have more helpful features and give a better user experience. This was a congratulatory present to myself as I’m coming up on my one year blogaversary (ah, thanks, Karlee). We have a few more things to update but for the most part, here she is! So, if you haven’t guessed, this is the time in the show where I talk about life and then give you a recipe at the very end. Because my life has been, as always, very interesting. So interesting that I’ve really only had time to pull together quick little meals for dinner. It’s been nothing extravagant or fancy, just fast, delicious meals that satisfy every part of my life. For example: not heating the oven, and assembling this quick Croissant and Fried Egg Sandwich so I can promptly head into the air-conditioned bedroom and watch The Night Of.

Yeah, you heard me right; we didn’t watch the Olympics. It was completely un-American and I’d taken to checking the medal count by swiping through my Snapchat filters. We decided to cancel our cable. Not in a really cool, we want less distractions kind of way, but in a we can’t afford to have a $100 cable bill and only watch Pretty Little Liars and Keeping Up With the Kardashians kind of way. Other than missing out on the Olympics, it’s been a solid choice. Also, stop judging me about the Kardashians, it’s pure entertainment, okay?

I’ve got the itch to start redecorating the house. To be clear, I get this itch about four times a year. I basically decide what I want to do and then I can never buy anything full price and then I give up only to rearrange what I already own with a few extra pieces I’ve bought from thrift stores for a total of twenty dollars. Don’t get me wrong, this isn’t me being a penny-pincher. I would just rather spend my money on a good pair of jeans and groceries. But the living room needs a switch up and I might just wait for the fall when I get to bring out Jack Skellington. (FALLLLL!)

I feel like I should be updating you on our minimalizing journey, but there isn’t too much to report other than it’s been a slow process. We purge, purge and purge, and then Daniel gets three boxes of memorabilia from his parents. This guy’s childhood was…well-documented. He has a lot of things to go through, but we are leaving that for when the garage isn’t a scorching 115 degrees.

I’ve also been capsulizing my wardrobe after my friend Erin introduced me to the idea. Here is a link that shows you exactly what I mean. It’s been great and since I don’t really have a huge summer wardrobe, it’s been fairly easy. It’s taken the what to wear guessing game out of my morning routine. But the season is about to change and making my Fall Capsule is going to be difficult. Deciding which sweaters will make the final cut is going to be like Sophie’s Choice.

So now, check out this super-simple recipe for a Fried Egg Croissant Sandwich. I love a fried egg sandwich. It was a staple in my house growing up. White bread—not toasted, over-easy egg, seasoned salt, and mayonnaise. Heaven. But here is my fancy version. The one that says “Okay, Karlee, you need to eat your vegetables and fruit.” I’m not claiming this is super healthy, but I always feel better about a meal if it has a good freshness to it.

Especially when tomatoes are soft and fresh, jalapeño’s are perfectly mild, and basil is everywhere! And, nothing brings a sandwich to the next level quite like a buttery croissant. Can I get an Amen? Try it out the next time you only have a few minutes to spend in he kitchen. I promise you won’t regret the decision.

Croissant and Fried Egg Sandwich

Best way to eat a croissant. Grilled pineapple and runny fried egg. Hello fresh basil and jalapeño! Avocado and heirloom tomatoes? Don’t mind if I do.

Ingredients

Croissants

Fried Eggs

Grilled Pineapple

Avocado, thinly sliced

Heirloom tomatoes, sliced

Fresh basil

Chopped, fresh jalapeño

Whipped cream cheese

Instructions

Toast the croissants, grill the pineapple and fry the eggs to your liking. Assemble and enjoy!

  1. Gorgeous photos and I love the new format! Love it! Other things – I am going to start watching “The Night Of” now, thanks for the idea…but after I finish Scandal, which I am shamelessly addicted to. I feel this minimalist style you’re doing. I did the clothes thing in January and life has been so much easier – but I am struggling going into Fall because I WANT EVERYTHING. And lastly, this sando – veggies make it totally healthy and eating eggs for dinner has been my post vaca jam.

    1. Cannot wait for you to start “The Night of”. I’ve also been thinking about starting Scandal! (maybe I don’t have enough time to commit to it though!). As for the wardrobe, maybe we could just do a supersize fall capsule? We can make it a thing. As for post vaca… I have no clue how you are not 500 pounds. No clue.
