Jumbo Peanut Butter Chocolate Chip Cookies

Jumbo Peanut Butter Chocolate Chip Cookies

I’m finally sitting down to write this post. It may not seem like a big feat to all of you. But to me, it is like trying to run away from a bad guy in a nightmare. That’s the resistance. I’ve just come off a long weekend—well really, two long weeks—of special orders. My feet are killing me, my body aches in places that I’m confused about, I seem to have crusted buttercream in my left earlobe, and my kitchen—although it’s back to it’s regularly scheduled cleanliness—is devoid of any real food with the exception of a few loose string cheese sticks, a gallon of 1% milk, and some eggs. Our dairy intake is doing just fine.

Back to my previously stated, resistance… what is it? Resistance is anything that wants to take me away from my life’s work. Writing is the biggest of them all. Get this: even though I enjoy writing, like, a crazy amount, resistance tells me that moving the laundry and fitting in JUST one more Friends episode before I start is more important than doing my life’s work. Resistance IS the laundry. Resistance IS the guilt. Resistance IS the fear. Resistance IS the voice that breeds compromise.

When I say, “life’s work,” I know it seems a little too self-important. It’s not, it’s what I label my most important work. It might be writing for you too. It might be raising children to be amazing human beings. Or, it might even be your 8–5. However, giving your most important work the title it needs to survive in the pile of resistance waiting to be folded and put away in it’s drawers is just what it needs to thrive.

How do I overcome my resistance? It’s a muscle. It needs to be pushed and stretched and built up. It takes time. Resistance for me is rare now. It used to be ever present. It used to keep me asleep until 8 a.m. It used to tell me that “I can’t…” It’s voice is quiet now, because I don’t give it the power.

But also, music. Remember that one episode of The Office where Jim trains Dwight to want an altoid every time the sound of his computer boots up? Music. I have a playlist that I listen to every time I write. I’m listening to it right now. Every time I feel the resistance, I pour myself a cup of coffee, plug in my earphones, put on that Pandora playlist that I have so carefully curated, and I write, work, e-mail, and pitch. Life’s work kind of stuff. My body knows that when this music comes on, it’s time to do my life’s work.

All of this came from a book I read a few years back called The War of Art by Steven Pressfield. Because of it, I recognize resistance for what it is. It is powerful and it is subtle. And really, I’m writing about it today instead of taking up a whole post to talk about these very yummy Jumbo Peanut Butter Chocolate Chip Cookies, because I get asked a lot. LIKE A LOT. How do you do it? How do you fit it all in? The answer isn’t simple. It isn’t cut and dry, and it’s not for everyone. But, if you want to be a wonderful parent to your children, if you want to make partner by age 30, or if you just want to lose weight, first pay tribute to the resistance. It will surface the day after you set your goals. It will be powerful. Give it it’s due. It didn’t come here to make friends. To be successful in any endeavor you face, you first have to overcome the resistance.

Trust me, the resistance isn’t as powerful on day 756. It’s there, oh it’s there! But, it’s in its right place, telling lies to the part of me that is a skeptic. I don’t feed it.

And so she gracefully transitioned into talking about chocolate chip cookies. Because, in her heart, chocolate chip cookies are her life’s work.

Really, they are. I’m obsessed with chocolate chip cookies. All of them! Big, small, soft, crispy, buttery, I’ll take them. These took a while to develop and there was no resistance involved in the testing process. I needed to make these cookies work. I needed to find the best Jumbo Peanut Butter Chocolate Chip Cookie recipe. Today, I won the battle. These cookies are soft, but they still have that buttery, crispy, outside edge that makes the texture impossible to resist. If you *slightly* undercook them and wait a vvverrryy long time before you transfer them to a cooling rack, you will have yourself an impossibly creamy, chewy, soft cookie.

If you feel the resistance today, find your playlist. Find your why. It’s only JUST Tuesday. You still have a crazy amount of time to make this week the best it can be. Full of cookies, dreams, goals, and the power of overcoming.

1/2 cup butter

1/2 cup creamy peanut butter

1/2 cup sugar

1/2 cup brown sugar

1 teaspoon vanilla

1 egg

1 1/2 cups flour

1/2 teaspoon baking soda

1/2 teaspoon baking powder

1/2 teaspoon salt

2 cups semi-sweet chocolate chips

Cream the butter, peanut butter, sugar, brown sugar, and vanilla together until creamy. Add the egg and mix on low for about 15-20 seconds.

Add the flour, then sprinkle in the baking soda, baking powder, and salt. Mix until evenly combined. Fold in 1 1/2 cups of the chocolate chips.

Scoop dough onto a parchment-lined baking sheet. Use large cookie scoop or an ice cream scoop. Flatten the cookies with your fingers until they are a little over a half-inch thick. Top the cookies with the rest of the chocolate chips.
