Watermelon Basil Granita Popsicles

Well, well, well, we’ve made it to the end of the week! [squeezing my eyes closed in excitement!], and yes, it’s definitely time for a treat. How about Watermelon Basil Granita Popsicles? Yes! They are sweetened with a little bit of honey, but other than that, they are ALL WATERMELON! Because, when the going gets hot, the hot gets watermelon!

So, the concept was to bring the flavor of my favorite watermelon granita into a popsicle form. Yes, I did it and it turned out legit. If you want to make this even more “granita-like” than it already is; freeze the mixture first on a baking sheet, then shave it with a fork. Then pack the mixture into your popsicle molds. However, that takes more work, more dishes, and more wait! Seriously, who wants to wait for dessert? NEED IT NOW.

All right, let’s talk about how excited I am that basil is fresher than ever. I can’t even. All I want to do is eat all the pesto that is humanly possible. One of may favorite ways to eat pesto is on top of ricotta — on top of toast with popped cherry tomatoes on top. You guys, try it!

I actually like to use basil in some sweeter recipes because basil is naturally sweet as is! It gives such a fresh taste to anything! I love how it just kind of turns up the taste on these popsicles. Courtesy of warmer weather. (Karlee, hot weather isn’t all that bad now, is it?)

I’ve got a mess of things to do still, but my business has somewhat subsisted for the time being. I still have softball games and a few special orders, but they are FUN. I have them down to a science now. It’s smooth sailing from now until Harry Potter/Disney!!!!!!  I now have packing down to an art. We seem to be traveling every few months. Packing is a very specific talent of mine. It consists of packing everything you need, everything you might need, and the kitchen sink. Packing light is for chumps.

Okay, but I’m so thankful that I have these little guys in my freezer right now. Thank you, Dixie cups! I don’t have any popsicle molds, but Dixie cups have always worked for me. I just place plastic wrap on top of the cups, and I poke a hole in the center of the wrap of each cup to keep the stick upright. Plus, they are the perfect size for a quick treat that won’t break the calorie bank.

If I’m being really bad, I would make Coco-Cola popsicles. So good! I don’t drink soda because it’s so addicting, and I don’t need to waste calories on liquids, thank you. I waste enough calories on low blood sugar. However, these were my favorite growing up! Like so…. So…. SOOOO good. Brings back only good memories of when I was able to produce insulin and eat mindlessly. GOOD TIMES!

Okay, back to it! Give these Watermelon Basil Granita Popsicles a go! I’ll be making them on my Instagram story as soon as I can… I’m thinking possibly tomorrow! I’ve been making a few recipes there lately, and it’s been a BLAST. Really, it’s just my way of dipping my toe into the Facebook Live pool. Watermelon Basil Granita Popsicles

This is the best way to cool off from the heat! Plus, they are naturally sweetened! This recipe for Watermelon Basil Granita Popsicles are all you need.

Ingredients

Scale

1 lb watermelon cubed

1 lime, juice and zested

1/4 cup honey

4-6 fresh basil leaves

popsicle sticks

Dixie cups

plastic wrap

Instructions

Place watermelon, lime zest, lime juice, and honey in a blender and blend until liquid. Add the fresh basil and blend until they are in small but visible pieces. 

Pour mixture into Dixie cups, and place on a baking sheet. Cover with plastic wrap and cut holes on top to insert the popsicle sticks so that they stand up straight (as seen in the photo above).

Place in the freezer for about 2 hours or until frozen. When ready to eat, dip each Dixie cup into warm water for a few seconds before tearing off of the cup to reveal the popsicle.
