Blueberry Lavender Buttermilk Galette

Ingredients

|| Crust ||

2 1/2 cups flour

1 teaspoon salt

2 teaspoons sugar

1 cup butter, cubed

1/3 cup buttermilk

|| Filling || 

1 1/2 lbs blueberries

Juice of one lemon

3/4 cup sugar

1/3 cup flour

1 1/2 tsp dried lavender

1 egg for an egg wash and finishing sugar (if desired)

pinch of salt

Instructions

|| Crust || Pulse the flour, salt, sugar, and butter together until the butter is pea-sized. Add the buttermilk, and continue to pulse. Once the flour sticks to itself when you squeeze it in your hands dump out dough onto a floured surface, and work it together into a ball. Flatten dough into a disk, and cover with plastic wrap. Place in the fridge to chill for 30 minutes.

|| Filling || Mix the blueberries together with the lemon juice, sugar, flour, lavender, and salt. 

Preheat the oven to 400 degrees.

Roll out the dough into a 12-inch circle adding more flour to the surface when needed. Transfer the dough onto a baking sheet or pizza stone. Dump the blueberries in the center of the circle leaving a 2-inch margin around the edges. Fold the edges of the dough in toward the center. Brush the crust with an egg wash and sprinkle with finishing sugar. 

Bake in the oven for 40 minutes. Let cool for at least one hour before serving.
