I’ve been thinking a lot about some of my favorite vintage-style dishes. Some worth mentioning and others that need to be left in the 1950’s where they belong. But, there is one that just kept popping up in my mind as the perfect nostalgic treat: the Ambrosia salad.

Now, now, now, don’t stick your nose up too long because we made it a little more modern while still keeping to its vintage elements (Hi, coconut and marshmallows!).

I played around with several versions of this classic before landing on the Cherry Almond Ambrosia Salad we have for you today. It has all the things that complement this very cherry-forward dessert. But, it still has a good crunch thanks to the slivered almonds and some chopped, tart apple.

I’ve used Oregon Fruit Products for a while now, and I always get a ton of questions about them. They’re unlike any other canned fruit. Speaking of spring, aren’t we just so thankful it’s finally here? I’ve washed my picnic blanket, and I’m ready to sit outside in 70 degree weather and eat homemade scones and drink iced green tea. I’m ready for desserts to be chilled, sleeves to be short, and colorful flowers to fill my nightstand. We really need this and more. I think I’ve watched enough TV to last me through the summer.

Cherry Almond Ambrosia Salad

A new twist on a classic! Let’s all welcome back the ambrosia salad!

Ingredients

1 can Oregon Fruit Products dark Sweet Cherries

1 can Oregon Fruit Products light Sweet Cherries

1 can Oregon Fruit Products red raspberries

2 cups chopped Granny Smith apples

1 cup sweetened coconut flakes

2 cups mini marshmallows

1/2 cup slivered almonds

4 ounces cream cheese

1 cup powdered sugar

1 cup heavy whipping cream

*Whipping cream for topping*

Instructions

Drain the cans of fruit and do a rough chop through the cherries leaving them halved or quartered.

Place the fruit in a large bowl with the apples, coconut flakes, marshmallows, and almonds.

In a standing mixer or with a hand mixer, mix the cream cheese and powdered sugar until combined. With the mixer still on, slowly drizzle in the heavy whipping cream. Continue to whip on high until soft peaks form.

Pour the whipping cream into the bowl of fruit and toss together until well combined.

Refrigerate covered for at least 2 hours.

Top with additional whipped cream and sprinkles.
