Cranapple Pie

           My mornings have been spent watching the sunrise and studying the fog roll in from the river in the distance. It’s as lovely as it sounds. My afternoons are consumed with baking, lots of picture taking. And, into the evening, I get to sit on the couch, next to my tree and worry about all the things I’m putting off for the next day.

            It’s that time of year. When we are both riddled with the joy and happiness that comes with the season and a heaviness of BUSY. So, I’m trying to steal little moments in my day to just be. To appreciate my job, my life, my family and the fact that, no matter what, there is such a thing as pie.

            That’s the joy I’m bringing you today with the help of my friends at Stahlbush Island Farms. Lots of thanks and love for all the good things, frozen and accessible in my freezer. Like, these cranberries, which I’m using to bring a delightful POP of flavor to this apple pie. Having frozen cranberries handy is such a great help when making cranberry sauce or adding them to your favorite stuffing recipe.  

            And, you know what else we’re not going to worry about this year? Lattice. I mean it. We aren’t going to labor over the perfect pie topping when we have the tastiest crumble just waiting for us in our pantry. Read: sugar, brown sugar, oatmeal, flour, and butter.

            Now we assemble this goodness.

Make pie crust (or buy it when no one is looking). Cook the apples before assembling. This is a trick that I’m learning to love. Cooking off some of that extra moisture in apples helps the pie to not completely fall after baking. Make a mess. Like, a complete and total mess. It just helps the pie taste better, okay? Toss the cooked down apples with flour, sugar, cinnamon, nutmeg and a whole bag of those frozen cranberries. After we generously top with crumble, we’re going to place it in the oven while we sit back with an extra creamy cup of cocoa.

           And that’s it. Simple execution, wild flavor. So when we inevitably run out of steam but we’re still on the list to bring dessert. This is the pie for you.

Cranapple Pie

A sweet pie filled with cranberry, apple and topped with a crumbly topping.

Ingredients

Scale

|| Crust ||

2 cups flour

1 tablespoon sugar

1 teaspoon salt

2 sticks butter, chilled

1/3 cup buttermilk, chilled (plus more if needed)

|| Filling ||

6 large apples

1 bag Stahlbush Island Farms frozen cranberries

1/4 cup flour

1/2 cup sugar

1 teaspoon cinnamon

1/2 teaspoon nutmeg

2 teaspoons vanilla

|| Crumble ||

1 cup flour

1/2 cup instant oats

1/2 cup sugar

1/2 cup brown sugar

1/2 cup butter, melted

Instructions

For the crust, toss the flour, sugar, salt together. Grate the chilled butter with a cheese grater and toss into the flour mixture. Add in the buttermilk and mix together until it starts to barely come together. Add more buttermilk if needed. The mixture should be dry but will stick together when you squeeze together a handful.

Form into a disk and cover with plastic wrap. Set in the fridge for 30 minutes before rolling out and forming onto a pie plate. Place pie crust back in the fridge to chill until the filling is ready

Preaheat the oven to 400 degrees

For the filling, peel and cube apples and place into a large skilled. Cook the apples down for about 5-7 minutes over medium heat. Take off the heat and add in the flour, sugar, cinnamon, nutmeg and frozen cramberries. Mixt together and pour into the prepared pie crust.

For the topping, toss all ingredients together and place ontop of the prepared pie.

Bake in the oven for 50-55 minutes. let cool at leaste 2 hours before serving.
