We are celebrating National Maple Syrup Day with hefty help from Eagle Brand® Sweetened Condensed milk to make up a really very tasty, ooey, gooey, sticky treat. This is definitely one of those baked goods that is classically comforting and all the things you need on a cold December night.

Those things include your teeth sinking into a creamy toasty topping. They include a buttery, flakey, shortbread crust and licking lips that have been dusted with powdered sugar. That’s the whole experience we’re going for in these Maple Coconut Gooey Bars. 

Let’s break down some deets, shall we? We are going to start with a buttery crust that will hold all that rich topping. I’m giving you permission to use a 9×9 or 8×8 baking dish for a thinner/thicker option at your choosing. We’ll bake it slightly before adding in the maple/sweetened condensed milk topping.

Once we melt some butter, maple syrup, brown sugar and sweetened condensed milk, we’ll pour that all over the half-baked crust and continue it on its journey into the oven. A quick topping of coconut flakes to give it a fun texture right before it’s done makes the flakes all toasty.

Dust the entire thing with powdered sugar once it’s cooled and you have yourself a real good time. It’s an incredibly rich dessert that will have you wanting a good wash down of milk or coffee. Which is all we ever ask of our desserts. That they wow us with comfort and excite our very lives.

Maple Coconut Gooey Bars

Ingredients

|| Crust ||

¾ cup butter, room temperature

1/3 cup sugar

2 egg yolks

2 cups AP flour

¼ teaspoons salt

|| Filling ||

1/3 cup maple syrup

1/3 cup brown sugar

½ cup Eagle Brand sweetened condensed milk

5 tablespoons butter

¾ cup coconut flakes

Powdered sugar for dusting

Instructions

Preheat oven to 350 degrees.

In a standing mixer, beat the butter, sugar and egg yolks together just until combined. Add the flour and salt, and mix until the crumbles start to form. Press the dough evenly into an 8″ x 8″ or 9″ x 9″ glass or metal pan. Bake in the oven for 15 minutes.

In a medium saucepan over medium heat, mix the maple syrup, brown sugar, sweetened condensed milk, and butter together. Cook until the mixture starts to bubble then remove from heat.

Pour the mixture into the crust and return to the oven for 25 minutes. Open the oven and sprinkle the top of the bars with the coconut flakes and bake for another 2-3 minutes or until the coconut begins to brown. 

Remove from the oven, and let cool on the counter for at least 2 hours before dusting with powdered sugar and serving.

    Oh my gosh, these are a definite must make. I cant have chocolate so I’m always excited to find a good recipe without it everyone will like. And it’s so easy!
