Peanut Butter Cookie Apple Crisp

Ingredients

|| Apple Filling ||

4-5 Granny Smith apples, peeled and cubed

1/2 cup butter

1 cup brown sugar

1 teaspoon vanilla

1 tablespoon corn starch

|| Cookie Crust ||

1/2 cup butter

1/2 cup peanut butter

1/2 cup sugar

1/2 cup brown sugar

1 egg

1/2 teaspoon salt

1 teaspoon vanilla

1/2 teaspoon baking soda

1/2 teaspoon baking powder

1 1/2 cups flour

Instructions

Preheat the oven to 350 degrees.

|| Apple Filling || Peel, core, and chop apples and place into a large saucepan with butter, brown sugar, and vanilla. Heat until the juices start to render, about 3-5 minutes. Remove a half-cup of the liquid that renders and place in a small bowl. Whisk liquid together with the corn starch and add back into the apples pouring over a sieve. Continue to stir occasionally while making the cookie crust.

|| Cookie Crust || In a standing mixer, combine the butter, peanut butter, sugar and brown sugar together until creamed. Add in the egg, salt, and vanilla and continue to mix on low until combined. Mix the dry ingredients together in a separate bowl and add to the peanut butter mixture.

When the apple mixture has thickened, pour into a 9-inch pie dish. Place the cookie dough on top of the apples. There might be some dough left over.

Bake in the oven for 17-20 minutes.
