Pepperoni Pizza Fondue

Ingredients

1 cup mini pepperoni slices

1/2 cup butter

2 cloves garlic, minced

pinch of salt

1/4 cup all purpose flour

2 cups heavy cream

1 cup whole milk

1 cup shaved parmesan cheese

2 cups shredded mozzarella cheese

1 tablespoon flat leaf parsley, chopped

Bread bowl, optional

Instructions

Place pepperoni slices in a frying pan over medium/high heat and cook until crisp.

Melt butter in a medium saucepan over medium/high heat. Add minced garlic, salt and flour, and cook together for one minute stirring occasionally. Add the cream and whole milk, and cook until the sauce starts to thicken. This should take about five minutes. Take off the heat and add the Parmesan cheese, and whisk until melted. Add in the mozzarella cheese half cup at a time and adding the next half cup once the previous has melted. Sprinkle in the minced parsley. 

Pour into a bowl or carved out bread bowl, and top with crispy pepperoni slices. Serve with bread, naan, bell peppers or any desired veggies. 

Notes

If you overcook the roux and the sauce is too thick, just add more whole milk and blend with an immersion blender

Serve immediately or place in a small crock pot on low and it will keep through the day.
