Sweet Ginger Pork Flavor Bowls

I haven’t done a bowl post in a while. I love them. It’s how I eat like 90% of the time. Especially if you include cold cereal. I flipping LOVE cold cereal. But these Sweet Ginger Pork Flavor Bowls will blow your mind. I’ve decided that I’m going to name all my bowls from here on out “flavor bowls.” It has a nice ring to it. Because that is what they are, flavor in a bowl.

This one is great. Really easy to put together and can I just say, delicious? I have recipes that I make every once and a while, and then I want to try something new, new, NEW! But, this one has been on repeat in our house lately and for good reason.

It comes together nice and fast so it makes it on my weekday meals list. Don’t we all need that meal that when all else fails you know the ingredients by heart, and you know it will satisfy that salty-sweet craving that comes almost every Wednesday? Just me?

This also ranks tops on my perfect diabetic meal plan perfection list. It super easy to add more spinach and sub out the rice if I have high blood sugar. It also has a serving of fruit, veggies, carbs, and protein. What? I know, I know, I’ve outdone myself.

Especially, when it’s the new year and we are all trying to get back on track after a few months of eating, that have been let’s say, less than reputable. I’m not going to pretend like I had my eating under control this Christmas season. But, I will admit that it’s been hard trying to balance the new insulins and figure out all that carb counting. I think my weight is going to yo-yo for a while until I can get more consistent.

They call this stage of Type 1 diabetes the “Honeymoon phase.”  I might understand it once it has passed. Right now, however, it doesn’t feel too great. I’m tired, I’m wired, I have a headache, I’m normal, I’m happy, I’m low, I’m cranky, I’m full, and I still need to eat. I have no romance with this thing. I want it gone, I want it out of my life forever.

But, that is not my reality. I have about as much control over curing this thing as I did getting it. Absolutely ZERO. Hey, Karlee, here is a life lesson on control and how there is none for ya’.

But, I can balance it. Thank you, insulin. You have LITERALLY saved my life.

And, thank you meals like Sweet Ginger Pork Flavor Bowls that bring balance to my daily eating. Consistency is key. But honestly, I would have loved this flavor bowl before my body killed off all my beta cells, because this dinner is the BOMB.

Sweet Ginger Pork Flavor Bowls

These sweet, yet savory Ginger pork bowls are the go-to meal for any weekday dinner. They come together super fast and are as healthy for you as tasty.

Ingredients

Scale

2 tablespoons sesame oil

1 yellow onion

1 pound ground pork

2 cloves ground garlic

2 teaspoons ground ginger

1 teaspoon salt

1/4 cup cilantro, chopped

|| Garnishes ||

4 cups cooked white rice

2 cups cooked spinach, chopped

2 cups sliced red cabbage

5 Mandarin oranges, segmented

Sweet chili sauce for topping

Instructions

Place a large skillet over medium/high heat. Add the sesame seed oil to the pan. Chop the yellow onion and add to the skillet with the garlic, salt, and ginger. Place the pork in the skillet and cook until browned. Remove from the heat. Add the cilantro and mix in. 

Assemble the bowl with rice, spinach, cabbage, mandarins, sweet ginger pork, and top with sweet chili sauce.
