Funfetti Chocolate Chip Cookie Sandwiches

Oh the joys of being your own boss. Here are some of the things they didn’t tell me. No matter how much you love your home, you will get cabin fever. That extra time you now have because you quit your 9-5? It’s like holding water in your hands. And, just because you can wear sweatpants all day, doesn’t mean you should.

Look, these are just a few examples.

I’m currently in a coffee shop a literal block from my house, which holds responsibilities that I cannot outrun. That laundry? Those dishes? Season 2 of Veronica Mars? They are all there, waiting to tempt me out of my work. And so, I sit in a plastic, orange chair writing to you, as I should. I’m thankful for the refuge, the slippery glass of iced americano and to-go bag filled with a bright blue concha. Thankful.

Today we have a revamp recipe: Funfetti Chocolate Chip Cookie Sandwiches. I changed a few minor things. To make the cookie slightly softer and the filling slightly denser. Who leaves well-enough alone? Not me.

It’s a true funfetti cookie. Only white sugar, egg whites, a bit of almond extract and a heaping handful of jimmie sprinkles.

The filling is a mix of 7-minute icing and swiss meringue that we dollop in between two funfetti cookies for a truly delightful experience. One that should definitely be shared to a crowd of people, preferably family, for a birthday.

Other occasions include a Friday night, weekend baking project, a trip to the zoo or, because you wanted to. We are in control of our own lives here. We make our own decisions. In charge of our ovens.

I know I shouldn’t cheat on this recipe by telling you this, but making said cookie without the frosting filling is completely acceptable too. I’m telling you this because it’s one of those doughs that lasts well suspended in the freezer shaped in little cookie balls to be baked at a time when you so desire. There are about a dozen of them in my freezer right now for when I JUST need a warm chocolate chip cookie fresh out of the oven. Which is just about every Monday-Friday night.

Funfetti Chocolate Chip Cookie Sandwiches

Life is better when it’s funfetti. Try out these simple yet delicious Funfetti Chocolate Chip Cookie Sandwiches! They are a hit with kids and adults alike!

Ingredients

||Chocolate Chip Cookies||

1/2 cup butter

1/2 cup flavorless oil

1 cup granulated sugar

1 teaspoon vanilla

1/2 teaspoon almond extract

1/2 teaspoon salt

3 egg whites

2 1/2 cups plus 1 TBSP all-purpose flour

1/2 teaspoon baking soda

2 cups chocolate chunks

1 cup multi colored Jimmie sprinkles 

||Frosting Filling||

1 cup sugar

1/4 teaspoon salt

1/4 teaspoon cream of tartar

2 egg whites

3 tablespoons water

1 teaspoon vanilla

1 1/2 cups butter, room temp

Instructions

Preheat the oven to 350 degrees.

|| Chocolate Chip Cookies || Place butter, oil, sugar, vanilla, almond extract, and salt in a standing mixer with a paddle attachment and beat on medium speed until it becomes fluffy. Add egg whites, and mix until incorporated.

Add dry flour, baking soda, and salt to the butter mixture, and beat again until combined. Add the chocolate chips and sprinkles and mix until combined. 

Using a small cookie scoop, drop cookie dough two inches apart onto a silicone mat or parchment lined baking sheet. Bake for 10-12 minutes. Do not brown.

Let cookies cool before frosting.

|| Frosting || Combine the sugar, salt, cream of tartar, egg whites, and water together in a stainless steel saucepan. Heat over medium/low and beat with an electric hand mixer for 5-7 minutes until stiff peaks form. Remove from heat and stir in vanilla. Let cool for about 10 minutes. Add in the butter, 1/2 cup at a time and beat with an electric mixer until creamy and stiff. 

Pipe frosting between two cookies, press together, and enjoy!
