Dill Chicken Salad Pitas

It’s been well documented, I’m a salad kit kind of girl. There is maybe nothing more convenient. Especially in the Spring and Summer when we are just too hot to have steaming broccoli. Or, when we need some crunch on top of a turkey sandwich, inside a wrap, on top a pizza (don’t knock it until you try it).

Days seem to be going by fast in the Flores home. There are lots of things to accomplish and some days my head is so deeply buried in my computer or behind my camera lens that I don’t even glance up at the clock until it’s well past 7:00PM. Routine, what is that anymore? So, I’ve been filling my fridge with things that are both refreshing and convenient. Something that I know is good for me.

Today we’re stuffing fresh pitas with a chicken salad that’s been mixed with walnuts, apple slices, onion, celery, cornichons. The crunch, the fresh/sweet/tart of it all, this recipe is for everyone. But, also, let me be the millionth person to say, use whatever is in your cupboard. We’ll top this chicken salad with a fresh Taylor Farms salad and we’ve got the freshness that’s just needed.

This is the kind of food that makes us happy. It’s light, fresh and ready with enough time for a walk after.

Dill Chicken Salad Pitas

A fresh, crisp chicken salad topped with a dill forward crunchy salad stuffed into a pita.

Ingredients

Scale

1 lb chicken breast, cooked & chopped

1/2 cup red onion, diced

1/2 cup apple, diced

1/3 cup walnuts, chopped

1/3 cup celery, diced

1/4 cup cornichons, diced

1 1/4 cup olive oil mayonnaise

1 tablespoon whole mustard

1 teaspoon fresh dill

8 half pita shells

1 bag Taylor Farms Dill Pickle Chopped Kit

Instructions

In a medium bowl, mix the chicken, onion, apple, walnuts, celery, cornichons, mayonnaise, whole mustard, and fresh dill together until combined.

In a separate bowl, toss the Dill Pickle Chopped kit together.

Place about 1/2 cup of dill chicken salad in the bottom of a pita and top with Dill Pickle salad.
