Pink Velvet Chocolate Chip Cookies

I think God blesses us in whispers. It’s when the sun is shining on the day you really need it. It’s the wind that blows through your hair that brings comfort in the midst of pain. It’s the gentle words of a friend. Those are my blessings.

If you are like me, you see all the blessings other people receive. “Oh, so and so is pregnant again?” makes sense. “Oh, they ended up buying that second home” COOL. “Oh, they were able to take a month off and travel through Europe.” sounds right.

I’m not always the best at recognizing the blessings right in front of me. I am, regrettably at times, an ever-evolving work-in-progress. But, I see the value in it. I see the value in taking a deep breath in, acknowledging all the blessings I have, and exhaling all of those destructive thoughts. I know this as a fact: I don’t have what everyone else has, but maybe that’s what makes me unique.

I have so much in my life. Sure there are a few days that shine bright lights on things I don’t have, Mother’s Day for one. Yours might be Valentine’s Day. I think it’s important to remember that each day is our own personal day of recognition. I am working to be aware of all that my life has. All the little ways I have been blessed and the big too. If I have a breath to take, then I should be thankful.

This Valentine’s Day, I’m going to recognize all the love in my life. Love from the sweetest husband in the entire universe, but also the love from my friends and family. If you are feeling without this Valentine’s Day, I encourage you to acknowledge the kiss on the cheek from your niece, the wind in your hair from up above, the smile on the street from a stranger, the coffee art in your cappuccino, a text from your friend and the quiet comfort that tomorrow is another day. Pink Velvet Chocolate Chip Cookies

Pink Velvet Cookies are just the recipe needed to take your cookie to the next level. They are chewy, soft and all around beautiful!

Ingredients

Scale

1/2 cup butter, room temperature

1 cup white sugar

1 egg

1/4 teaspoon baking soda

1/4 teaspoon salt, heaping

1/2 teaspoon almond extract

1/4 teaspoon vanilla extract

1 drop of soft pink gel food coloring

1/2 teaspoon vinegar

1 3/4 cup all purpose flour

1 cup mini chocolate chips

Instructions

Preheat oven to 375 degrees.

Cream butter and sugar together in a standing mixer with a paddle attachment until combined. Add in the egg and mix until it becomes slightly pale in color, about 2 minutes. While it is mixing on medium/low, add in the baking soda, salt, almond and vanilla extract, food coloring and vinegar. Scrape down the sides of the bowl with a spatula and mix again for another minute. Add in the flour a half cup at a time and once it is fully combined. Add in the mini chocolate chips. Mix the chocolate chips in fully with a wooden spoon.

With a medium cookie scoop, portion out the dough and roll into a ball in your hands then shape like a large marshmallow and stand up tall on a cookie sheet. Place your cookies 2 inches apart. Sprinkle mini chocolate chips on the top of the cookies and press in slightly.

Bake for 10-12 minutes and let cool 5 minutes until moving to a cooling rack.

  2. Ohmygoodness!! These cookies are delicious! Made a batch for my neighbor who just had a baby girl and of course I had to taste test! Love the almond flavor puts a lil twist on just a “regular” chocolate chip cookie! Will definitely be making these again!! Thank you for the recipe 🙂
