How are we, friends? Are we good? Are we okay? Are we loving up the new season? Are we starting up a new fall routine? Soak it all in. It’s the best time of the year. It’s the time where we all wrap ourselves in chunky sweaters, watch rom-coms and generally bask in the smell of hazelnut scented candles and cinnamon filled quick breads. We are all here and showing up for fall.

The alternate weather has caused a shift in me down to my core. It’s still warm but not the unholy heat of summer. The trees that rest across the river from the St. Johns Bridge are starting to morph into an autumnal masterpiece. My afternoon walks are now littered with crispy leaves. And, in the rare moment it rains, I head outside to take a deep breath in. I’ve settled into the rhythm of this place in time to start a new season, with a new routine.

The pace of my day is better when I get up early in the morning. First, a quick shower and then I gaze (way too long) at my phone screen. Then down the stairs to my Nespresso Essenza Mini Machine, where I proceed to make myself a warm beverage known as the Virgin Irish Coffee. It’s a fun, little twist on the traditional Irish recipe. It’s simple but warm and I snuggle into my spot on the couch to enjoy a little moment to myself. Sans e-mails. Sans phone. Sans list making. Just a proper cup of espresso, easily made in the comfort of my home. Delightfully, it’s enough caffeine for me to start my day. To move onto the daily tasks which seem to be never-ending and repetitive. But also, consistent and comforting.

Virgin Irish Coffee with Nespresso

Liven up your fall routine with this recipe for Virgin Irish Coffee with Nespresso. A slightly sweet treat with a lovely cream finish.

Ingredients

½ cup brown sugar

½ cup water

1 cup whipping cream

4 Fortissio Lungo Capsules

Instructions

In a small saucepan over medium heat, melt the brown sugar and water together stirring just until the sugar is dissolved. Bring to a slow boil and let simmer for 10 minutes.

 

Whip the whipping cream until very soft peaks form. Do not over whip.

 

Brew 1 Fortissio Lungo Capsule in your View Cappuccino Cup. Add 1-2 teaspoons of the brown sugar simple syrup and top with a generous dollop of whipped cream.
